Additionally, many of your sources for these games are also kind of ancient, no doubt employing deprecated pre-20th century language conventions. Both of these (but especially the first), I think, are sound arguments against taking the conventions of the table games community regarding capitalization and applying them to this specific segment of Knowledge against standard English conventions for capitalization.
